Editions is a rotating weekly menu series showcasing Modou’s kitchen notebook brought to life in the Studio. A space for ideas, experiments, and creative expression through food.

Every Thursday, Modou opens his kitchen to his notebook, and your plate becomes his canvas.

Bookings for each Thursday open weekly, with only 20 tables available per venue across South and West.

The Dessert Experiment

The Dessert Experiment explores dessert as composition rather than conclusion. Where flavour, texture, temperature, and contrast are treated as creative materials.

Sweet overlaps with savoury. Smoke meets acidity.

Familiar flavours are broken apart, reconstructed, and designed to both challenge and please your palate. This is dessert, viewed through Chef Modou’s curiosity rather than convention.

Our kitchen becomes Modou’s notebook and your plate becomes the canvas.
