The Inspiration of Scotland is a project built around our national larder – Shetland mussels, Hebridean scallops, Scottish beef, sea trout and peak-season produce. It’s not a greatest-hits list, but a five-course tasting that moves between shoreline and countryside, light and rich, classical technique and Modou’s own instincts.
